Not So Pinteresting... Cauliflower Pizza

We don't eat carbs in this household.

That's a lie, but we try to stay away from them. Travis gave me a nutrition lesson and turns out bread isn't as good for me as I thought it was.

So since we have been trying to be basically carb free, there hasn't been much pizza for us. And I love pizza. So when I found a blog post for easy peasey cauliflower crust pizza (click here for the recipe) and the lady said you couldn't tell what the crust was made of we had to try it.

Her recipe said one thing of cauliflower would be needed for one 9 inch pizza but ours made two.

Optimus was our cooking-mate

Since we don't have a food processor and didn't want to use a cheese grater, we used this mini chopper we got for our wedding.

The chopper only did about half a cup each round and we needed 2 cups, it was still way better than hand grating it though.

Add water and cook it in the microwave

It came out looking a little like mashed potatoes

Then we added the cheese and the egg. We didn't have any eggs and had to use egg whites so... it was even more healthy!

After baking them the tops looked like this, the bottoms weren't cooked as well so we flipped them over and baked them for just a few minutes.

So so tasty... it wasn't exactly the same but cauliflower pizza is better than no pizza.
